Quinoa Tabbouleh Salad

Ingredients:

  • 3 cups cooked quinoa
  • 1 bunch green onions, chopped
  • 1/2 bunch parsley, chopped
  • 1 cucumber, chopped
  • 2 tomatoes, chopped
  • 1/2 green pepper, chopped
  • 1/3 cup olive oil
  • 1/3 cup lemon juice
Directions:
  1. Cook quinoa according to package. Cool. 
  2. Mix oil and lemon juice and add to cooled quinoa. Add chopped vegetables. Mix and refrigerate for several hours or overnight. Salt and pepper can be added if desired.
