- 3 cups cooked quinoa
- 1 bunch green onions, chopped
- 1/2 bunch parsley, chopped
- 1 cucumber, chopped
- 2 tomatoes, chopped
- 1/2 green pepper, chopped
- 1/3 cup olive oil
- 1/3 cup lemon juice
- Cook quinoa according to package. Cool.
- Mix oil and lemon juice and add to cooled quinoa. Add chopped vegetables. Mix and refrigerate for several hours or overnight. Salt and pepper can be added if desired.
