- 4 large beefsteak tomatoes, peeled and chopped
- 2 medium zucchini, diced
- 2 green peppers, diced
- 1/2 very large sweet onion, diced
- 2 cloves of garlic, minced
- 2 tsp. dried basil
- 3 tbsp. olive oil
- 3/4 tsp. salt
- 1/4 tsp. pepper
- Put all ingredients into a saucepan. Cook until soft. Can be eaten warm or cold. Store in refrigerator.
