App Attack!--September 6, 2018

September's Recipe Club theme was APP ATTACK! We focused on appetizers and small bites to share. There was a lot of variety and different foods to try.

Cherryl made "Cheese Dip." It goes great with pretzels and is a really easy dip to make...only 10 minutes!

Jan made "Texas Trail Dip." This is a recipe she got from her nephew in Houston and she enjoys making it a lot!

Pat R. made "Spinach Squares." It's a recipe from her co-worker that is often requested!

Pat R. also made quick and easy "Special Deviled Eggs," a popular appetizer around here!

Don made these easy skewers loaded with tomato, mushrooms, olives, cheese, and peppers, along with some tomato chips he tried for the first time!

Margene brought "Veggie Pizza," another popular appetizer! This recipe makes a lot of servings, too!

Marie made "Pinwheels," another easy and popular recipe that can feed a crowd! 


Pat D. made "Spaghetti and Meatball Nests." This is a fun appetizer take on a traditional meal!


Margaret made "Taco Roll-Ups." It's a pinwheel with a taco flair!

Trudy L. brought "Spinach Dip." A traditional appetizer that's easy to prepare and looks amazing served in a bread bowl!

Sue R. brought "Chipotle Cornbread Cups," and it's a recipe she modified from an old Pamper Chef book.

Helen made "Chile Relleno Casserole," and it's a quick appetizer that's easy to throw together.

Sue S. made "3-Cheese Artichoke Bites." The three different cheeses blend well with the artichokes!

Josh made "Maple Pecan Baked Brie." This appetizer has pecans and maple, some good fall flavors!

Rose Mary and Fred brought "Homemade Olive Tapenade" and "Herb and Lemon Goat Cheese Spread."

Rose Mary and Fred also brought "Savory Olive and Tomato Palmiers."

Mary B. brought Ham Roll-Ups and Cheese and Grape Skewers.

Karen brought two goat cheese appetizers: Honey, Fig and Pistachio and Honey, Fig, and Citrus. She also brought some Deli meat roll-ups.

Chris made "Veggie Appetizer." A creamy spread on top of a crust with lots of veggies and cheese!

There were many great recipes shared and more to try next time! Getting hungry? Join us October 4 at 6:30pm at Franklin Public Library. The theme is Slow Cooker Revolution--Bring out your slow cooker for low and slow cooking fun!

All you have to do to join is cook a dish from the monthly theme, and bring the dish and the recipe to the meeting! It's as easy as pie! See you soon!

Herb and Lemon Goat Cheese Spread

Ingredients:

  • 4 oz. soft, fresh goat cheese
  • 4 oz. low-fat cream cheese
  • 2 teaspoons chopped fresh thyme
  • 2 teaspoons grated lemon peel
  • 1/2 tsp. garlic powder
  • 1 tsp. onion powder
  • 1/4 tsp. Penzy's Salt-Free Sunny Spain seasoning
  • Fresh lemon juice
Directions:

  1. Place goat cheese and cream cheese in small bowl.
  2. Mix thyme, lemon peel, garlic powder, onion powder, and seasoning in another small bowl. Season with black pepper.
  3. Mix thyme mixture into cheese mixture.
  4. Form cheese into 2 1/2-inch round; flatten slightly.
  5. Place in center of plate. 
  6. Serve with toasted baguette slices.

Chipotle Cornbread Cups

Ingredients:


Muffins

  • 1 cup shredded Tex-Mex cheese
  • 1 pkg. Corn muffin mix
  • 3/4 cup sour cream
  • 1/4 cup flour
  • 1 tbsp. chipotle seasoning
Meat Mix
  • 1 lb. ground turkey
  • 2 cloves garlic, minced
  • 2 scallions, with tops
  • 1 small pepper (red/orange/yellow)
  • 1 tbsp. chipotle seasoning
  • salt/pepper to taste
Directions:
  1. Preheat oven to 350°F.
  2. Make the meat mix: Saute the ground turkey, garlic, scallions, pepper, chipotle seasoning, salt and pepper. Set aside.
  3. Mix cheese, muffin mix, sour cream, flour and chipotle seasoning together in a bowl; batter will be thick. Place spoonful of batter in a mini muffin pan (sprayed with non-stick spray). Bake for 15-16 minutes.
  4. Immediately press center of muffin to form cup shape (use back of spoon). Cool in pan for 3-4 minutes, then remove to serving plate. Fill with meat mix.

Greek Dip

Ingredients:


  • 1 (10 oz.) container classic hummus
  • 1 (10 oz.) container Mediterranean style hummus
  • Cucumbers, chopped
  • Cherry tomatoes, quartered
  • Kalamata olives, sliced
  • Feta cheese, crumbled
Directions:
  1. Combine both hummus' together. Spread on bottom of serving dish. Top with remaining ingredients.
  2. Serve with pita, chips, or veggies.

Cheese Dip

Ingredients:


  • 1 (16 oz.) tub of Mertz's Extra Sharp Cheddar
  • 1 (8 oz.) pkg. cream cheese
  • 1 stick butter
Directions:
  1. Let all ingredients come to room temperature. Using an electric mixer, whip all ingredients together. Serve with small round pretzels.

Spinach Squares

Ingredients:


  • 4 tbsp. butter, melted
  • 3 eggs
  • 1 cup flour
  • 1 cup milk
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 small onion, chopped
  • 2 (8 oz.) pkg. finely shredded Colby-Jack cheese
  • 2 (10 oz.) pkg. frozen chopped spinach, thawed
Directions:
  1. Mix all of the ingredients together in a large bowl. Lightly spray the bottom of a 9x13-inch pan. Bake in a 350°F oven for 35-40 minutes.
  2. Cut into serving pieces and enjoy. Tastes the BEST when warm!

Pinwheels

Ingredients:


  • Flour tortilla shells
  • assorted deli meats
  • Mayo or Miracle Whip
  • Chopped onions
  • Chopped peppers
  • Chopped tomatoes
  • Chopped lettuce
  • Shredded cheese
Directions:
  1. Lay tortilla shells on a flat surface. Spread with a thin layer of mayo. Place deli meats over the mayo. Spread another layer of mayo over the meats. Top with remaining ingredients. Roll up tightly. Wrap in plastic.
  2. Refrigerate several hours. Unwrap. Cut into 1/2 inch to 3/4 inch slices. Secure with toothpick.

Taco Roll-Ups

Ingredients:


  • 8 oz. cream cheese, softened
  • 1 cup sour cream
  • 1 envelope taco seasoning mix
  • 1/4 cup chopped black olives
  • 2 cups shredded cheddar cheese
  • 15 flour tortillas
Directions:
  1. Blend cream cheese, sour cream, and taco seasoning in bowl. Add olives and cheddar cheese, mix well. Spread about 1 tablespoon mixture on each flour tortilla; roll as for a jelly roll.
  2. Chill until serving time. Cut into bite-sized pieces and arrange on serving plate.

Maple Pecan Baked Brie

Ingredients:


  • 8 oz. Brie
  • 1/4 cup light brown sugar
  • 1/4 cup maple syrup
  • 1/4 tsp. ground cinnamon
  • 3/4 cup chopped pecans
Directions:
  1. Preheat oven to 350°F.
  2. Place Brie in a small baking dish or pie plate and bake for 15 to 20 minutes until warm.
  3. Meanwhile, add sugar, maple syrup, and cinnamon to a small saucepan and cook over medium heat, stirring occasionally until sugar dissolves and mixture just begins to boil.
  4. Remove from heat and stir in pecans. Pour mixture over Brie and serve warm with bread or crackers.

Spinach Dip with Round Rye Bread

Ingredients:


  • 2 (10 oz.) pkg. frozen, chopped spinach, thawed and squeezed dry
  • 8 oz. water chestnuts, drained and chopped
  • 1 cup sour cream
  • 1/2 cup plain yogurt
  • 1/2 cup light mayo
  • 1 cup scallions
  • 1/2 tsp. tarragon leaves
  • 1/2 tsp. dry mustard
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 clove crushed garlic
Directions:
  1. Mix all ingredients together. Chill for 1 hour. Serve in hollowed out round rye bread. Or sever with crackers or veggies.

Veggie Appetizer

Ingredients:


  • 2 cans refrigerated crescent rolls
  • 2 (8 oz.) pkg. cream cheese
  • 1/2 cup Miracle Whip (or sour cream)
  • 1/2 tsp. dill weed
  • 1/2 tsp. salt
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup green pepper, chopped
  • 1 cup seeded tomato
  • 1 cup onion
  • 1 cup black olives (optional)
  • 1 cup shredded cheddar cheese
Directions:
  1. Preheat oven to 350°F. Spread crescent rolls on 10x15x1-in. ungreased sheet. Bake 11-13 minutes until golden brown. Let cool.
  2. Mix cream cheese, dressing (or sour cream), salt, and dill until well blended. Spread over crust. Top with remaining ingredients.
  3. Cover and chill. Cut into squares and serve!
