- 2-4 zucchini (about 8-10 inches long), split in half
- 1 lb. ground beef
- 1/2 cup onion, chopped
- 1/2 cup mushrooms
- 1/2 of a red pepper, chopped
- 2 tbsp. ketchup
- Salt and pepper to taste
- Cheddar cheese
Directions:
- Scoop out insides of zucchini, chop up, and put in a bowl.
- Brown the ground beef. Add onion, mushrooms, pepper, ketchup, salt and pepper to pan. Cook in pan for 5 minutes.
- Fill zucchini boats with mixture and top with cheddar cheese. Bake for 30 minutes at 350°F.
