Walnut Coffee Cake

Ingredients:


Cake
  • 1/2 cup butter
  • 1 cup sugar
  • 3 eggs
  • 2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 8 oz. sour cream
  • 1 tsp vanilla
Streusel
  • 1 cup brown sugar
  • 3 tbsp. flour
  • 3 tbsp. butter
  • 2 tsp. cinnamon
  • 1/2 cup chopped walnuts
Directions:
  1. Mix streusel ingredients and set aside.
  2. Beat the butter and sugar together. Blend well. Add the eggs one at a time. 
  3. Mix the dry ingredients together. Add this mixture to the butter, sugar, and egg mixture alternatively with the sour cream. Add the vanilla.
  4. Grease the bottom of a tube pan. Sprinkle some of the streusel mixture on the bottom of the pan. Add half of the batter mixture. Sprinkle more of the streusel over the batter. Add the remaining batter and top with the rest of the streusel mixture.
  5. Bake in a 350℉ oven for 40-50 minutes.

Lemon Cream Torte

Ingredients:


Crust

  • 2 cups graham cracker crumbs
  • 1/2 cup butter, melted
Filling
  • 2 (15 oz.) cans sweetened condensed milk
  • 3/4 cup lemon juice
  • 2 tsp. grated lemon rind
  • 1 pint whipping cream
Directions:
  1. For the crust: Mix together crust ingredients and put into a 9-inch spring form pan or a 9 x 13 inch pan.
  2. For the filling: Whip the whipping cream. Set aside. Whip the 2 cans of sweetened condensed milk, adding the lemon juice  and lemon rind. Whip until think, about 5 minutes. Fold in the whipped cream. 
  3. Put the filling in the crust and chill until serving.

Cheesy Potatoes

Ingredients:


  • 1 pkg. cheesy potatoes frozen hash browns
  • 1 cup diced onion
  • 16 oz. sour cream
  • 1 can cream of chicken soup, undiluted
  • 1/2 cup butter, melted
  • 12 oz. shredded cheddar cheese
  • Salt and pepper to taste
  • Crushed corn flakes
Directions:
  1. Place all ingredients minus the corn flake crumbs in a 13 x 9 inch pan. Sprinkle the corn flakes on top.
  2.  Bake for an hour in a 350℉ oven.

Salsa

Ingredients:


  • 4 Roma tomatoes, seeded
  • 1/2 green bell pepper
  • 1/2 large onion
  • 1/2 jalapeno pepper
  • 2-3 cloves garlic
  • Fresh cilantro to taste
  • Juice of 1/2 lemon
  • Salt and garlic salt to taste
Directions:
  1. Quarter the tomatoes and cut the green pepper and onions into smaller chunks.
  2. Add all the ingredients to food processor and process to desired cut. 

*NOTES: Bill cuts the jalapeno and garlic to a very small dice before adding to food processor. He also uses a a hand processor (Salsa Maker) purchased from the Wisconsin State Fair.

Artichoke Dip

Ingredients:


  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 can artichoke hearts, chopped
  • 4 oz. package grated mozzarella cheese
  • 1 package Knorr Vegetable Recipe Mix
  • 1 tsp. garlic powder
Directions:
  1. Mix all ingredients. Put into a pie plate and bake at 350℉ for 30 minutes. Serve with crackers.
