Chickepea Salad

Ingredients:

  • 1 avocado
  • 1/2 fresh lemon
  • 1 (14.5 oz. can) chickpeas, drained
  • 1/4 cup red onion, sliced
  • 2 cups grape tomatoes, sliced
  • 2 cups cucumbers, diced
  • 1/2 cup fresh parsley
  • 3/4 cup green bell, diced
  • 1/4 cup olive oil
  • 2 tbsp. red wine vinegar
  • 1/2 tsp. cumin
  • salt and pepper
Directions:
  1. Cut avocado into cubes and place in bowl. Squeeze the juice from 1/2 a lemon over the avocado and gently stir to combine.
  2. Add chickpeas, onion, tomatoes, cucumbers, parsley, and green bell pepper and gently toss to combine. 
  3. Refrigerate at least one hour before serving.
