Chipotle Cornbread Cups

Ingredients:


Muffins

  • 1 cup shredded Tex-Mex cheese
  • 1 pkg. Corn muffin mix
  • 3/4 cup sour cream
  • 1/4 cup flour
  • 1 tbsp. chipotle seasoning
Meat Mix
  • 1 lb. ground turkey
  • 2 cloves garlic, minced
  • 2 scallions, with tops
  • 1 small pepper (red/orange/yellow)
  • 1 tbsp. chipotle seasoning
  • salt/pepper to taste
Directions:
  1. Preheat oven to 350°F.
  2. Make the meat mix: Saute the ground turkey, garlic, scallions, pepper, chipotle seasoning, salt and pepper. Set aside.
  3. Mix cheese, muffin mix, sour cream, flour and chipotle seasoning together in a bowl; batter will be thick. Place spoonful of batter in a mini muffin pan (sprayed with non-stick spray). Bake for 15-16 minutes.
  4. Immediately press center of muffin to form cup shape (use back of spoon). Cool in pan for 3-4 minutes, then remove to serving plate. Fill with meat mix.
