Muffins
- 1 cup shredded Tex-Mex cheese
- 1 pkg. Corn muffin mix
- 3/4 cup sour cream
- 1/4 cup flour
- 1 tbsp. chipotle seasoning
Meat Mix
- 1 lb. ground turkey
- 2 cloves garlic, minced
- 2 scallions, with tops
- 1 small pepper (red/orange/yellow)
- 1 tbsp. chipotle seasoning
- salt/pepper to taste
Directions:
- Preheat oven to 350°F.
- Make the meat mix: Saute the ground turkey, garlic, scallions, pepper, chipotle seasoning, salt and pepper. Set aside.
- Mix cheese, muffin mix, sour cream, flour and chipotle seasoning together in a bowl; batter will be thick. Place spoonful of batter in a mini muffin pan (sprayed with non-stick spray). Bake for 15-16 minutes.
- Immediately press center of muffin to form cup shape (use back of spoon). Cool in pan for 3-4 minutes, then remove to serving plate. Fill with meat mix.
