Chocolate Pecan Bars

Ingredients:

  • 1-1/2 cups sifted all-purpose flour
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. baking powder
  • 1/2 cup firmly packed light brown sugar
  • 3/4 cup (1-1/2 sticks) butter, softened
  • 3 eggs
  • 1/2 cup firmly packed light brown sugar
  • 1 cup dark corn syrup
  • 1/4 cup all-purpose flour
  • 2 squares semisweet chocolate, melted and cooled (3 tbsp. chocolate chips)
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 1-1/2 cups pecans, coarsely chopped
Directions:
  1. Preheat oven to 350°F. 
  2. Sift the 1-1/2 cups flour, cinnamon and baking powder into a large bowl; stir in the 1/2 cup brown sugar. Cut in butter with a pastry blender until mixture is crumbly. Pat into greased 13x9x2-inch baking pan. 
  3. Bake in preheated oven for 10 minutes. Remove to wire rack. Leave oven on.
  4. Beat eggs, remaining brown sugar, syrup, remaining flour, chocolate , vanilla and salt in a large bowl with an electric mixer until blended. Pour over dough layer in baking pan. Sprinkle with chopped nuts. 
  5. Return to oven and bake 30 minutes longer. Cool on wire rack. Cut into bars.
Serves: 24

Flat Turtle Pie

Ingredients:


  • 2 refrigerated pie crusts
  • 1 cup chopped pecans
  • 1/3 cup dark brown sugar
  • 3 tbsp. caramel sauce
  • Chocolate shell ice cream topping
Directions:
  1. Preheat oven to 375°F. Roll out pie crusts and allow to warm up while oven preheats.
  2. Mix together pecans, sugar, and caramel sauce.
  3. Place 1 pie crust on parchment lined cookie sheet. Spread pecan mixture on crust, leaving about 1/2-inch around the edge. Top with other pie crust. Fold and pinch around the edge to seal. Cut slits into the crust to allow for venting.
  4. Bake for 20-25 minutes, then remove to a wire rack to cool for 15 minutes. 
  5. Squeeze the chocolate over the top of the crust and store in the fridge to allow chocolate to set up. Use a pizza cutter to slice into desired number of pieces.

Bread Pudding

Ingredients:

  • 4 cups bread cubes, stale (or bake in a 250°F oven for 20-30 minutes to dry them)
  • 1/4 - 1/3 cup raisins
  • 2 tbsp. instant pudding (french vanilla)
  • 1 cup whole milk or half and half
  • 2 eggs
  • 3 tbsp. melted butter
  • 2 tbsp. sugar
  • 1/4 tsp. vanilla
  • 1/4 tsp. cinnamon
  • 1/8 tsp. nutmeg
Directions:
  1. Stir together the bread cubes, raisins, and pudding in a large bowl.
  2. In a small bowl or mixing cup, mix milk, eggs, butter, sugar, vanilla, cinnamon, and nutmeg. Add to bread cube mixture, and stir to coat. Transfer to a crockpot that has been coated with cooking spray.
  3. Cook on low for 2 to 2-1/2 hours, or until a knife inserted in the center comes out clean.
*NOTE: This recipe is made for a small crockpot, but it can be doubled for a full-size crockpot.

Chocolate Zucchini Cake

Ingredients:


  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 stick butter, softened
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 tsp. vanilla 
  • 1/2 cup milk mixed with 1/2 tsp. vinegar
  • 2-1/2 cups flour
  • 1/4 cup unsweetened cocoa 
  • 2 tsp. baking soda
  • 1/2 tsp. ground allspice
  • 1/2 tsp. cinnamon
  • 2 cups grated zucchini
  • 3/4 cup semi-sweet chocolate chips
Directions:
  1. Combine sugars, butter, and oil. Beat until fluffy. Add eggs one at a time, beating after each. Add vanilla and soured milk; beat until smooth. 
  2. Sift dry ingredients and gradually add to mixture; beat until smooth. Fold in zucchini. Turn into a greased and floured 9 x 13 in. pan. Sprinkle chocolate chips on top and press in with spoon until just covered with batter.
  3. Bake at 325°F for 45-60 minutes.
  4. If desired, frost with a frosting of your choice.

Apple Pie

Ingredients:

  • 3/4-1 cup sugar
  • 3 tbsp. flour
  • 6-7 cups sliced peeled apples
  • 2 tbsp. butter
  • 1/2 tsp. cinnamon
  • 1/4 tsp. salt
Directions:
  1. Combine sugar, flour, cinnamon, and salt. Mix lightly through apples. Heap in a 9-inch pastry lined pie pan. Dot with butter. Adjust top crust and flute edges. Cut vents. 
  2. Bake at 425°F for 50-60 minutes until crust is brown and apples are tender.

Peanut Butter Nougats

Ingredients:

  • 1 cup peanut butter
  • 1 cup corn syrup
  • 1-1/4 cups powdered milk
  • 1-1/4 cups powdered sugar
Directions:
  1. Combine ingredients and shape into 1 inch balls. OPTIONAL: Roll in miniature chocolate chips or chopped peanuts.

Jello Salad Mold

Ingredients:

  • 1 (3 oz.) pkg. cherry jello
  • 1 (3 oz.) lemon jello
  • 1 can cherry pie filling
  • 1 (8 oz.) pkg. cream cheese
  • 1 cup crushed pineapple, drained well
  • 1/2 cup small marshmallows
Directions:
  1. Bottom layer: dissolve cherry jello in 1 cup boiling water. Then add the cherry pie filling. Chill until firm.
  2. Top layer: Dissolve lemon jello in 1 cup boiling water. Beat in cream cheese, crushed pineapple (drained well) and small marshmallows. Chill until firm.

Carrot Cake

Ingredients:


Cake

  • 1 (8 oz.) can unsweetened crushed pineapple
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 tsp. baking soda
  • 1 tsp. ground cinnamon OR pumpkin pie spice
  • 1/4 tsp. salt
  • 4 eggs
  • 1 cup vegetable oil
  • 2 cups shredded carrots
  • 3/4 cup chopped walnuts
Frosting
  • 2 (8 oz. each) pkg. cream cheese, softened
  • 1/4 cup butter, softened
  • 2 tsp. vanilla extract
  • 1-1/2 cups confectioners' sugar
Directions:
  1. Drain pineapple, reserving 2 tbsp. juice (discard the rest).
  2. In a large mixing bowl, combine dry ingredients. Add eggs oil, carrots, pineapple, and reserved juice, beat until combined. Stir in walnuts.
  3. Transfer to a greased 13x9x2 inch pan. Bake at 350℉ for 35-40 minutes, or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
  4. For frosting: In a small bowl, beat cream cheese and butter until smooth. Beat in vanilla. Gradually beat in confectioners' sugar until smooth. Spread over cake.
Serves: 12
