Waffle Sausage Breakfast Casserole

Ingredients:

  • 14 oz. Polish sausage
  • 1/2 cup diced red pepper (kielbasa)
  • 10 large eggs
  • 2-1/2 cups milk
  • 1-1/4 tsp. salt
  • 3/4 tsp. pepper
  • 2 green onions, sliced
  • 9.5 oz. shredded sharp cheddar cheese
  • 8 oz. frozen waffles
  • 6 oz. whole wheat bread
Directions:
  1. Preheat oven to 375°F. 
  2. Cook sausage over medium heat, breaking up as you go, in an oven safe 10 inch cast iron skillet. Drain fat.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper. Stir in green onions, cheese, waffles, bread, and sausage. Pour into skillets and bake for 30 minutes. 
  4. Cover with foil and bake an additional 30 minutes.
  5. Serve with maple syrup!

Zippy Egg Casserole

Ingredients:

  • 1 lb. pork sausage
  • 1 (5 oz.) package seasoned croutons
  • 2 cups shredded cheese (cheddar, Swiss, pepper jack, or a mix)
  • 8 eggs
  • 2-1/2 cups milk
  • 1 cup half-and-half
  • 1 tbsp. minced onion
  • 1-1/2 tsp. dry mustard 
  • salt and pepper, optional
  • parsley for garnish
Directions:
  1. Cook sausage in large deep skillet over medium heat, stirring to break up clumps, until evenly browned; drain.
  2. Arrange croutons in a single layer in a greased 9x13 inch baking dish. Sprinkle with cheese. Top with sausage. 
  3. Whisk together eggs, milk, half-and-half, onion, and mustard in a large bowl. Pour into pan. Sprinkle with salt and pepper. Chill covered for at least 1 hour, or up to 12 hours. 
  4. Preheat oven to 350°F. Bake uncovered until puffed, golden, and set, about 45-60 minutes. Let stand 20 minutes and garnish with parsley.

Baked Chicken Marsala and Rice Casserole

Ingredients:

  • 1 cup Riceland Extra Long Grain Brown Rice
  • 1 sweet onion, sliced
  • 1 cup chicken broth
  • 1 tbsp. extra-virgin olive oil
  • 6 baby portabella mushroom, cut into large pieces
  • 2 tbsp. Marsala wine
  • 2 cloves of garlic, minced
  • 2 tbsp. heavy whipping cream
  • 1/4 tsp. sea salt
  • 1/8 tsp. black pepper
  • 2 tbsp. Italian seasoned bread crumbs
  • 2 chicken breasts, cut into tender sized portions
  • 2 tbsp. extra-virgin olive oil
  • 1/4 tsp. sea salt
  • 1/8 tsp. black pepper
  • 2 tbsp. ground Parmesan cheese
  • 1 pkg. frozen peas
  • French fried onions for the topping
Directions:
  1. Boil water in a pot on stove and add rice to boiling water and cook for 15 minutes. Drain and set aside.
  2. In a large skillet, add onions, ½ cup chicken broth, 1 tablespoon oil. Cover and cook on medium high heat for 20 minutes.
  3. Add mushrooms to skillet with additional ½ cup of broth and cover for five minutes.
  4. Add Marsala wine, garlic, cream, ¼ teaspoon salt and 1/8 teaspoon pepper to skillet and stir thoroughly. Remove from heat and pour into a large bowl. Add rice to bowl and mix thoroughly. Set aside.
  5. In a gallon sized plastic bag, place bread crumbs and chicken. Close securely and shake until chicken is fully coated with flour.
  6. Heat skillet to medium-high heat and add 2 tablespoons of oil. Layer chicken in skillet and cook both sides for five minutes. Season with ¼ teaspoon salt and 1/8 teaspoon black pepper.
  7. Preheat oven to Bake 350°F.
  8. Once chicken has finished cooking in skillet, add to rice mixture.
  9. Grease 9x11 pan and add chicken, rice mixture to pan, and frozen peas and top with Parmesan cheese and French fried onions.
  10. Bake for 20 minutes and remove. Let rest for 10 minutes before serving.

Corn Casserole

Ingredients:

  • 1 can creamed corn
  • 1 can kernel corn, drained (or 1 cup frozen corn)
  • 2 eggs
  • 1/2 cup butter, melted
  • 1 (8 oz.) package Jiffy corn muffin mix
  • 1/2 tsp. salt and pepper
Directions:
  1. Mix all ingredients and place in a greased casserole.
  2. Bake at 350°F for 45 minutes.

Tater Tot Casserole

Ingredients:

  • 1 lb. ground beef
  • 1 lb. ground pork
  • 1 (10.5 oz.) can cream of mushroom soup
  • 1 (10.5 oz.) can cream of chicken soup
  • 1 (8 oz.) can mushrooms, stems and pieces
  • 1 small onion, chopped
  • 1 stalk of celery, chopped
  • 1 cup frozen whole kernel corn
  • 1 cup frozen green beans
  • 1 tsp. garlic powder
  • 1/2 tsp. ground black pepper
  • Bag of frozen tater tots
Directions:
  1. Fry and drain beef and pork. Remove from pan and set aside.
  2. In same pan, saute onion, celery, corn, and beans until tender. Add soups, mushrooms with juice, seasonings, and meat to pan. Add more liquid (water, stock, or milk) as needed and simmer to preferred thickness. 
  3. Bake tater tots for extra crispiness. 
  4. Place meat mixture in the bottom of a greased 9 x 13 inch roasting pan.cover with one layer of tater tots and bake assembled casserole at 350°F to 400°F until entire dish is hot and bubbly. If preferred, cover with 1-2 cups cheese of choice for last 10-15 minutes. 
  5. Try any variations of ingredients and spices to make it your own.
