- 1-1/3 cup vegetable oil
- 3 cups flour
- 1-1/2 tsp. baking powder
- 2-1-2 cups sugar
- 1/4 tsp. salt
- 1-1/2 cups milk
- 3 eggs
- 1 tsp. almond extract
- 1-1/2 tsp. vanilla extract
- 1-1/2 cup blueberries
- 1/2 cup chopped walnuts
Directions:
- Preheat oven to 350℉. Spray the baking pans with Pam.
- Mix the flour, baking powder, sugar, and salt in a bowl and set aside.
- Beat the milk, vegetable oil, eggs, and extracts until combined. Gradually beat in the flour mixture. Fold in the blueberries and walnuts.
- Divide the batter into 4 or 5 mini baking pans. Bake for 40-45 minutes. Test for doneness by inserting a toothpick in the center and it comes out clean.
