- 3 cups rolled oats
- 1 cup sunflower seeds
- 1 cup pepitas
- 1/2 cup slivered almonds
- 1-1/2 tsp. salt
- 1/4 tsp. ground cinnamon
- 1/2 tsp. ground cardamom
- 1/2 cup olive oil
- 1/2 cup plus 1 tbsp. pure maple syrup
- 3/4 tsp. vanilla extract
Directions:
- Preheat oven to 325°F. Spray muffin tin with olive oil spray (spray really well!).
- In a large bowl, combine oats, seeds, pepitas, almonds, salt, cinnamon, and cardamom.
- Add oil, maple syrup, and vanilla and stir together.
- Using a 1/4 cup, scoop mixture into 24 muffin cups. Spray hand with cooking spray and press mixture into bottom and up the sides of the muffin cups.
- Bake in oven for 20-25 minutes, or until they start to brown.
- Let cool completely before removing from muffin tins. Store in an airtight container.
