- 3 English cucumbers, halved lengthwise and thinly sliced on the diagonal
- 2 small sweet onions, such as Vidalia, halved and thinly sliced
- 1/2 cup julienned red sweet pepper (optional)
- 1/2 cup fresh flat leaf parsley, coarsely chopped
- 3 tbsp. olive oil
- 1/2 tsp. kosher salt
- 1 tsp. salt-free lemon pepper
- 1/2 tsp. ground coriander
- 3 tbsp. lemon juice
- 2 tbsp. white vinegar
Directions:
- In a large bowl, toss all ingredients together.
