- 12 oz. cranberries
- 2 jalapenos, seeded and minced
- 2 tbsp. finely grated fresh ginger
- 1/2 cup sugar
- 1/4 cup chopped green onions
- 1/4 cup fresh cilantro leaves, minced
- 2 tbsp. lemon juice
- 8 oz. package cream cheese (optional)
Directions:
- Rinse, drain, and pick over cranberries (discarding all that are soft or bruised). Place cranberries in a food processor or blender and pulse until finely chopped, but not mushy.
- Place crushed cranberries in a bowl. Mix together with the green onions, jalapenos, cilantro leaves, and grated ginger. Pour lemon juice and sugar over and stir together. (If using food processor, you can process the cranberries, green onion, jalapenos, cilantro, and ginger together, being careful so the salsa is not mushy.)
- Cover with plastic wrap and refrigerate to allow the flavors to develop. It will be a bit tart to begin with, but as it sits, it will develop more flavor.
- Can be served as a plain salsa, but tastes amazing served over cream cheese with crackers.
