Shrimp Dip

Ingredients:

  • 2 (8 oz.) packages cream cheese, softened
  • 1 can cream of shrimp soup (Campbell's)
  • Onion salt, to taste
  • Garlic powder, to taste
  • 2 cans shrimp, drained and rinsed
Directions:
  1. Beat cream cheese and soup until creamy. This with a little milk if it is too thick. Mix all remaining ingredients and serve with chips or crackers.

Eggnog Ice Cream

Creme de Menthe Cake

Ingredients:

  • White cake mix
  • 1/2 cup Creme de Menthe, divided
  • Chocolate syrup
  • 8 oz. Cool Whip
Directions:
  1. Prepare cake mix according to directions EXCEPT substitute 1/4 cup Creme de Menthe for water. Bake.
  2. When cool, poke holes and wfill with chocolate syrup and remaining Creme de Menthe to taste. 
  3. Frost cake with Cool Whip.

Microwave Peanut Brittle

Ingredients:

  • 1 cup sugar
  • 1/2 cup corn syrup
  • 1 cup peanuts (raw Spanish peanuts)
  • 1 tbsp. butter or margarine
  • 1 tsp. vanilla
  • 1 tsp. baking soda
Directions:
  1. Caution! Mixture will be extremely hot once microwaved!
  2. Combine sugar and corn syrup in a microwavable bowl, preferably glass. Microwave for 3 minutes. 
  3. Add peanuts and stir. Microwave for another 3 minutes. 
  4. Add butter and vanilla, stir, and microwave for 1-1/2 minutes. 
  5. Add baking soda, stir quickly, and pour out onto a well-buttered pan or silicone baking mat.
  6. Let cool. Break into serving size chunks.

Butterscotch Haystacks

Ingredients:

  • 11 oz. package butterscotch morsels
  • 3/4-1 cup peanut butter
  • 8.5 oz. can chow mien noodles
  • 3 cups miniature marshmallows
Directions:

  1. Melt butterscotch morsels in microwave or double boiler. Stir in peanut butter until smooth. Add noodles and marshmallows.
  2. Drop by spoonful on wax paper or foil.

Caramels

Ingredients:

  • 2 lbs. brown sugar
  • 1 can sweetened condensed milk
  • 1 pint light Karo syrup
  • 1 lb. butter (no substitutes)
  • 1 tsp. salt
  • 1 tsp. vanilla
Directions:
  1. Gather a 15"x10"x1" jelly roll pan, candy thermometer, and a large pot.
  2. Combine first 5 ingredients in large pot. Cook and stir often to 242°F on candy thermometer. Add vanilla and cook to 248°F.
  3. Pour into well-buttered jelly roll pan. When cool, cut and wrap in wax paper.
  4. Store tightly covered in a cool (not cold) place.

Romantic Torte

Ingredients:

  • 1 cup hot water
  • 1 cup chopped dates
  • 1 tsp. baking soda
  • 1/2 cup shortening
  • 1 cup sugar
  • 1 tsp. vanilla
  • 4 eggs
  • 2-1/2 cups flour
  • 1 (9 oz.) bag chocolate kisses or stars
  • Maraschino cherries (optional) 
  • 1 cup chopped nuts (optional)
Directions:
  1. Pour hot water over dates, sprinkle with baking soda, and let set.
  2. Cream shortening and sugar, then add eggs and vanilla and beat well. Add flour and date mixture and mix well. Pour half of the mixture into a greased tube pan. Decorate with whole Hershey's Kisses. Pour in the rest of the mixture and decorate with kisses again. Add some maraschino cherries to the top for color and some whole nuts.
  3. Bake at 350°F for 1 hour.

Easy Cool Whip Dessert

Ingredients:

  • 8 oz. Cool Whip (or other brand whipped topping)
  • 1/4 cup milk
  • 1 pkg. of cookies (any type)
Directions:
  1. Use any type of container. Glass is nice so you can see the layers. Spread a layer of Cool Whip on the bottom. Dip cookies in milk for a few seconds. Place cookies in a layer on top of the Cool Whip. Spread another layer of Cool Whip. Continue layering with cookies and Cool Whip until container is full.
  2. Chill for a few hours or overnight for cookies to soften.
  3. You can tint the Cool Whip with food coloring depending on your event.

Applesauce

Ingredients:


  • 3 lbs. gala apples
  • 2-4 cups water
  • 2 cups sugar (or to taste)
  • 1-1/2 tsp. cinnamon (or to taste)
Directions:
  1. Peel, core, and slice apples. 
  2. Place apples in stock pot with 2 cups of water. Bring to a boil, add more water if necessary (depends on how much liquid comes out of you apples).
  3. Add sugar, reduce heat, and allow mixture to reduce.
  4. Add cinnamon and simmer for a few minutes.
  5. Give it a taste, and add more sugar or cinnamon if you think it needs it.

Cranberry Apple Salad

Ingredients:


  • 1 (12 oz.) bag fresh cranberries
  • 3/4 cup sugar
  • 1 tbsp. grated orange rind
  • Juice of 1 lime
  • 4 apples, chopped
  • 1 orange, chopped
  • 1 cup dried cranberries
  • 1/2 cup chopped walnuts
Directions:
  1. Combine cranberries, sugar, and orange rind and Pulse in a food processor until coarsely chopped.
  2. Add remaining ingredients and mix well.

Shrimp Dip

Ingredients:


  • 1 can tiny shrimp, drained
  • 8 oz. cream cheese
  • 2-4 tbsp. butter
  • 1 tbsp. onion, chopped
  • 1/2 tsp. lemon juice, optional
Directions:
  1. Blend all ingredients and chill

Party Shrimp Dip

Ingredients:


  • 1 (3 oz.) package softened cream cheese
  • 1/2 cup mayonnaise
  • 1 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 cup chopped green onion tops
  • 1-1/2 tbsp. lemon juice
  • 1 small can of shrimp, drained and diced (about 6 oz.)
Directions:
  1. Stir cheese and mayonnaise together. Add remaining ingredients and mix well. Do this a few hours before serving. Refrigerate and sprinkle with smoked paprika. 
Serves: 8-12

Cranberry Salsa

Ingredients:


  • 12 oz. cranberries
  • 2 jalapenos, seeded and minced
  • 2 tbsp. finely grated fresh ginger
  • 1/2 cup sugar
  • 1/4 cup chopped green onions
  • 1/4 cup fresh cilantro leaves, minced
  • 2 tbsp. lemon juice
  • 8 oz. package cream cheese (optional)
Directions:
  1. Rinse, drain, and pick over cranberries (discarding all that are soft or bruised). Place cranberries in a food processor or blender and pulse until finely chopped, but not mushy.
  2. Place crushed cranberries in a bowl. Mix together with the green onions, jalapenos, cilantro leaves, and grated ginger. Pour lemon juice and sugar over and stir together. (If using food processor, you can process the cranberries, green onion, jalapenos, cilantro, and ginger together, being careful so the salsa is not mushy.)
  3. Cover with plastic wrap and refrigerate to allow the flavors to develop. It will be a bit tart to begin with, but as it sits, it will develop more flavor.
  4. Can be served as a plain salsa, but tastes amazing served over cream cheese with crackers.
